Caribbean Swordfish with a Mango Salsa – although works equally well with fresh tuna steaks, yellowfin tuna is our favourite.

Just because you are away from many of your home comforts does not mean that you have to sacrifice fine food and the Cadac BBQ that you can hire with Freddie means that you can cook many a fine meal, whilst sat on the cliff top watching the sun set over the ocean – what more can you want.
Blending the flavours of rum, lime juice, chilli’s and mangoes with a fresh succulent Swordfish steak makes this recipe activate your tastebuds before you even start cooking.
The firmness of Swordfish makes it one of the easiest fish to grill on the barbeque and why it lends itself to cooking at the side of VW campervan.
There are two aspects to this simple recipe, the marinade for the fish and the salsa. To make the marinade you need the following readily available ingredients: –
Marinade
4 tbsp Olive oil
Juice of 4 fresh limes
2 tbsp rum
2 tbsp soy sauce
¼ tsp ground cloves
Ground pepper
Swordfish steaks
Simply mix all the ingredients together in a large bowl, add the swordfish and coat well in the marinade. Put in the fridge and leave for up to 4 hrs – turning occasionally.
Meanwhile, to make the Salsa
1 Mango chopped into bite sized chunks
2 spring onions finely chopped
1 red chilli
1 tbsp fresh chopped basil
Juice of 1 lime
Prior to cooking the fish, remove the steaks from the bowl and pour the marinade into a small saucepan and bring to the boil and remove from the hob.
When you ready to cook the swordfish, grill with the closed for around 15 minutes, turning once and brushing each side with the marinade. Please be aware cooking times may vary depending on the thickness of your fish.
Serve the steaks with the salsa over the top and enjoy.
